We are happy to announce our Spring/Summer harvest is finally here for 2022!
As many of you realize this summer has been tough on bees with the drought conditions throughout the area. We harvested later this year to ensure the bees had enough of their own nutritious food (honey) to make it through the summer dearth period. At the same time we didn’t want to wait until fall to harvest so as to keep this a pure spring/summer batch.
As a result this harvest I would describe as the ideal “Breakfast” honey. Not too light or dark in color, and with strong floral notes. Perfect for morning pancakes, french toast, or pastries! Also would pair well with light to medium soft cheeses.
